Q: What is Kombucha? 
A: Kombucha is an effervescent probiotic drink made from fermented tea and sugar. People have been drinking it for centuries and it is thought to have originated from China. We brew ours using organic teas and raw cane sugar. During the fermentation process, most of the sugars are eaten by yeast, so the end product has very minimal sugar. 
Q: Why drink Kombucha?
A: Since it is an excellent source of probiotics, many people drink Kombucha to maintain a healthy gut. The link between healthy bacteria in the digestive system and the immune system is becoming clearer as more studies focus on gut health. If the probiotics in Kombucha improve gut health, they may also strengthen the immune system overall. This is another reason we like to supply our brew to wildland firefighters, we like to think it keeps them healthy during those long days on the fire! Kombucha is also an excellent substitute for those who can't drink or do not enjoy coffee and an even better replacement for soda. Some people like to enjoy Kombucha instead of drinking alcohol, while others use it as a base for a cocktail! And of course, we also drink Kombucha because it is DELICIOUS!
Q: What is a S.C.O.B.Y?
A: S.C.O.B.Y is an acronym for Symbiotic Culture of Bacteria and Yeast. When the tea and sugar ferment, they create the S.C.O.B.Y which is the liquid part we drink. A common misconception is that the thick pellicle or "mat" that forms on top of the brew is the S.C.O.B.Y, but that is just a bi-product of the fermentation and is actually not needed to create Kombucha.
